Shelf-stable is a processing decision, not a marketing claim.
Retort processing uses controlled thermal treatment in sealed packaging. O2O Alliance can qualify a retort/RTE enquiry and coordinate a suitable brief with HSL Food, but the actual process, pack, formulation and validated shelf life must be confirmed by the manufacturing partner for the real SKU.
When retort may make sense
Retort can be suitable where ambient distribution, extended shelf life and convenience are important. Common concepts include curries, rendang, soups, gravies, rice meals, dhal and braised dishes.
What must be tested?
Commercial projects may require process validation, microbiological considerations, packaging compatibility, seal integrity, sensory testing and shelf-life work. The exact requirements should be confirmed with the selected qualified manufacturer and relevant specialists.
Retort pouch vs tray
Pouches are compact and heat efficiently; trays can provide stronger presentation and serving convenience. The right format depends on product geometry, fill weight, processing, channel and cost.
Can my home recipe go straight into retort?
Usually it needs evaluation. Heat processing can change texture, colour, sauce thickness and flavour perception. Trial batches help adapt the recipe while preserving the intended eating experience.
What to ask a manufacturer
- What retort formats do you support?
- What is the MOQ per SKU and pack size?
- Who owns the commercialised formulation?
- What validation and shelf-life documentation is available?
- Which certifications apply to the manufacturing facility and product scope?
- Can you support labelling, carton packing and logistics?
