Central Kitchen Malaysia

Standardise the food before you scale the outlets.

For restaurant groups and modern kopitiam concepts, O2O Alliance helps qualify central-kitchen enquiries and coordinate suitable sauce, paste, meal-component and prepared-food projects with HSL Food for manufacturing review.

80/20 outlet model

A practical restaurant model is to complete the complex, consistency-sensitive work centrally while leaving final cooking, reheating, frying, noodle preparation or plating to the outlet. The exact split depends on the menu.

What to standardise first

Start with the items that create the most variation or labour: sambal, curry, soup, marinade and braised components. Document gram weights, yield, storage, reheating and plating.

For kopitiam concepts

Common centralisable components include nasi lemak sambal, curry chicken gravy, mee siam paste, laksa soup base, chicken rice sauces, kaya, bakery items and beverage premixes. Supplier selection should remain product-specific.
